Ingredients (1 serving)
2 cups chopped romaine lettuce
2 hard-boiled eggs, sliced
½ cup cherry tomatoes, halved
1 can chunk white tuna in water, drained
2 small red potatoes, boiled and quartered
12 Kalamata olives
2 tbsp avocado ranch dressing
Avocado Ranch Dressing
1 medium ripe avocado
½ cup plain nonfat Greek yogurt (or 2% for creamier)
¼ cup low-fat buttermilk (or unsweetened almond milk for lighter)
1 tbsp fresh lemon juice
1 garlic clove, minced
2 tbsp fresh parsley, chopped
1 tbsp fresh dill, chopped (or 1 tsp dried)
1 tbsp fresh chives, chopped (or green onion tops)
½ tsp onion powder
