California Nicoise Salad

Ingredients (1 serving)

  • 2 cups chopped romaine lettuce

  • 2 hard-boiled eggs, sliced

  • ½ cup cherry tomatoes, halved

  • 1 can chunk white tuna in water, drained

  • 2 small red potatoes, boiled and quartered

  • 12 Kalamata olives

  • 2 tbsp avocado ranch dressing


Avocado Ranch Dressing

  • 1 medium ripe avocado

  • ½ cup plain nonfat Greek yogurt (or 2% for creamier)

  • ¼ cup low-fat buttermilk (or unsweetened almond milk for lighter)

  • 1 tbsp fresh lemon juice

  • 1 garlic clove, minced

  • 2 tbsp fresh parsley, chopped

  • 1 tbsp fresh dill, chopped (or 1 tsp dried)

  • 1 tbsp fresh chives, chopped (or green onion tops)

  • ½ tsp onion powder
