Ingredients (Serves 2): Buffalo Chicken Bowl
For the Bowl:
2 cups cooked white rice (warm)
10 oz chicken breast, cooked and shredded (or cubed)
1/3 cup Frank;s Red Hot buffalo sauce
1/2 cup celery, chopped
1/2 cup shredded carrots
1/2 cup cherry tomatoes, halved
2 green onions, thinly sliced
1/4 cup blue cheese crumbles
Optional Avocado Yogurt Sauce:
1 ripe avocado
1/2 cup plain Chobani Greek yogurt (nonfat)
Juice of 1/2 lime
1 garlic clove, minced
1 tbsp olive oil
Salt and pepper, to taste
2–3 tbsp water (to thin, as needed)
Instructions:
Cook the chicken – Grill, bake, or pan-sear chicken breast until fully cooked (165°F internal temperature). Shred or cube. Toss in buffalo sauce until coated.
Make the avocado yogurt sauce (optional) – In a blender or food processor, combine avocado, Greek yogurt, lime juice, garlic, olive oil, salt, and pepper. Blend until smooth, adding water a tablespoon at a time until it reaches drizzling consistency.
Assemble the bowls – Divide rice evenly between two bowls.
Top with buffalo chicken – Add chicken over the rice.
Add veggies – Arrange celery, shredded carrots, and cherry tomatoes around the bowl.
Finish with toppings – Sprinkle with green onions and blue cheese crumbles. Drizzle with avocado yogurt sauce if using.
