Tender chicken tossed in spicy buffalo sauce sits on a bed of fluffy rice, then gets loaded up with crunchy celery, shredded carrots, juicy cherry tomatoes, and a sprinkle of tangy blue cheese. And to cool things down, there’s the option to drizzle on a creamy avocado yogurt sauce that adds just the right touch of richness without weighing the dish down. It’s the perfect mix of spicy, creamy, and refreshing—all in one satisfying bowl.


Ingredients (Serves 2): Buffalo Chicken Bowl

For the Bowl:

  • 2 cups cooked white rice (warm)

  • 10 oz chicken breast, cooked and shredded (or cubed)

  • 1/3 cup Frank;s Red Hot buffalo sauce

  • 1/2 cup celery, chopped

  • 1/2 cup shredded carrots

  • 1/2 cup cherry tomatoes, halved

  • 2 green onions, thinly sliced

  • 1/4 cup blue cheese crumbles

Optional Avocado Yogurt Sauce:

  • 1 ripe avocado

  • 1/2 cup plain Chobani Greek yogurt (nonfat)

  • Juice of 1/2 lime

  • 1 garlic clove, minced

  • 1 tbsp olive oil

  • Salt and pepper, to taste

  • 2–3 tbsp water (to thin, as needed)


Instructions:

  1. Cook the chicken – Grill, bake, or pan-sear chicken breast until fully cooked (165°F internal temperature). Shred or cube. Toss in buffalo sauce until coated.

  2. Make the avocado yogurt sauce (optional) – In a blender or food processor, combine avocado, Greek yogurt, lime juice, garlic, olive oil, salt, and pepper. Blend until smooth, adding water a tablespoon at a time until it reaches drizzling consistency.

  3. Assemble the bowls – Divide rice evenly between two bowls.

  4. Top with buffalo chicken – Add chicken over the rice.

  5. Add veggies – Arrange celery, shredded carrots, and cherry tomatoes around the bowl.

  6. Finish with toppings – Sprinkle with green onions and blue cheese crumbles. Drizzle with avocado yogurt sauce if using.

  7. Serve immediately – Enjoy this quick and easy Buffalo Chicken Bowl with creamy, spicy, and fresh flavors in each bite.
