Made with lean ground beef, mushrooms, and a sticky sweet chili sauce, it’s balanced out with a refreshing cucumber sesame salad and served over fluffy white rice. Each bowl packs over 35 grams of protein, making it a great option for anyone who wants a high-protein beef bowl that’s easy to meal prep and satisfying enough for the whole family.

Ingredients
For the Sweet Chili Beef:
10 oz 93/7 lean ground beef
4–5 mushrooms, sliced
1 fresh chili, finely chopped (adjust to taste)
2 spring onions, chopped (reserve some green tops for garnish)
1 tbsp oyster sauce
2 tbsp sweet chili sauce
1 tbsp soy sauce
1 tbsp mirin
Cooking spray or ½ tsp oil
For the Cucumber Salad:
1 medium cucumber, cubed
1 spring onion, chopped
1 tsp soy sauce
1 tsp mirin
½ tsp sesame oil
½ tsp chili flakes (adjust to taste)
½ tsp sesame seeds
For the Base:
2 cups cooked white rice (1 cup per serving)
Instructions
Cook the beef – Heat a skillet with cooking spray or ½ tsp oil. Add the ground beef and mushrooms, breaking it up until browned. Stir in chili and spring onions.
Make it sticky – Stir in oyster sauce, sweet chili sauce, soy sauce, and mirin. Let it simmer 2–3 minutes until the sauce thickens and coats the beef.
Prepare the cucumber salad – In a small bowl, toss cucumber and spring onion with soy sauce, mirin, sesame oil, chili flakes, and sesame seeds.
Assemble the bowls – Add 1 cup cooked rice to each bowl. Top with sticky beef, garnish with reserved green onions, and serve with cucumber salad on the side.
